Description

  • 2 tablespoons red wine vinegar

Instructions

  1. Boil Potatoes: Place the peeled and chopped russet potatoes in a pot of salted water. Bring to a boil and cook until the potatoes are fork-tender, about 15 to 20 minutes. Drain thoroughly and allow the potatoes to sit for a few minutes to release excess moisture.
  2. Mash Potatoes: While still warm, mash the potatoes using a potato ricer or masher until smooth and lump-free, creating a creamy base for the dip.
  3. Blend Ingredients: In a food processor or using a hand mixer, combine the mashed potatoes with minced garlic, extra virgin olive oil, and red wine vinegar. Blend until the mixture is smooth and creamy.
  4. Adjust Consistency: If the dip is too thick, gradually add cold water, little by little, and continue blending until you reach a creamy, spreadable consistency.
  5. Season: Taste and season the dip with salt according to your preference.
  6. Garnish and Serve: Transfer the skordalia to a serving bowl. Optionally, garnish with chopped parsley or crushed walnuts. Serve chilled or at room temperature alongside warm pita bread, fresh vegetables, or as an accompaniment to grilled meats.

Notes

  • For a stronger garlic flavor, increase the number of garlic cloves used.
  • To create a lighter texture, replace part of the potatoes with soaked bread, following the traditional variation.
