This Slovenian Sweet Omelette is a light and fluffy dessert featuring a delicate cake-like omelette folded taco-style, filled with cranberry jam, and topped with whipped cream and fresh mixed berries. Perfect for a delightful treat that combines subtle sweetness with a burst of fruity flavor.

For the Omelette
- 2 eggs
- 30 g sugar
- 40 g all-purpose flour
- 1/4 tsp vanilla paste
- 1 tbsp kirsch liqueur
- 40 g cranberry jam
For the Topping
- 160 ml whipping cream
- 20 g icing sugar
- 200 g mixed fresh berries
Instructions
- Preheat and Prepare Pan: Preheat your oven to 200°C (400°F). Grease a 20 cm round springform cake pan thoroughly to ensure the omelette does not stick during baking.
- Separate and Whisk Eggs: Separate the egg yolks from the whites. Whisk the egg yolks with sugar and vanilla paste until the mixture becomes fluffy and pale. In a separate bowl, whip the egg whites until stiff peaks form.
- Combine Batter: Gently fold half of the beaten egg whites into the egg yolk mixture to lighten it. Add the flour and stir carefully to combine. Then fold in the remaining egg whites gently to retain the airy texture.
- Bake Omelette: Pour the batter evenly into the prepared springform pan. Bake in the preheated oven for 8 minutes until the omelette is set and lightly golden. Remove from the oven and carefully lift out of the pan.
- Shape Omelette: While still warm, fold the omelette in half into a taco shape. Allow it to cool for 3 to 5 minutes to set the shape but remain flexible.
- Prepare Topping: Whip the whipping cream with icing sugar until soft peaks form. Remove any rolling pin used for shaping from the omelette before proceeding.
- Assemble the Dessert: Lightly brush the inside of the folded omelette with kirsch liqueur for added flavor, then spread cranberry jam evenly. Decorate the top with mixed fresh berries and dollops of the whipped cream. Finish by dusting with a light layer of icing sugar.
