For the Asian Pulled Chicken:
- 1.5 pounds boneless, skinless chicken breasts
- 1/2 cup low-sodium soy sauce
- 1/4 cup hoisin sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 tablespoons honey
- 2 cloves garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 1/2 teaspoon crushed red pepper flakes (optional)
For the Nachos:
- 1 bag tortilla chips
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded red cabbage
- 1/2 cup shredded carrots
- 1/4 cup chopped green onions
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon sesame seeds
- Optional: sriracha or spicy mayo for drizzle
Instructions
- Prepare the Asian Pulled Chicken: In a slow cooker, whisk together soy sauce, hoisin sauce, rice vinegar, sesame oil, honey, garlic, ginger, and red pepper flakes. Add chicken breasts and coat with the sauce. Cook on low for 6–7 hours or high for 3–4 hours until tender.
- Assemble the Nachos: Preheat oven to 400°F. Spread tortilla chips on a baking sheet, top with pulled chicken and mozzarella. Bake for 5–7 minutes. Add cabbage, carrots, green onions, cilantro, sesame seeds, and drizzle with sriracha or mayo.
