Ingredients

Scale

Ingredients for Slow Cooker Crockpot Chicken and Stuffing:

  • 4 boneless, skinless chicken breasts
  • 1 (6-ounce) box stuffing mix (such as Stove Top)
  • 1 (10.5-ounce) can cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup low-sodium chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 1/2 cups frozen green beans or mixed vegetables (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Prepare the Slow Cooker: Spray the inside of a slow cooker with nonstick cooking spray.
  2. Season the Chicken: Place the chicken breasts in a single layer at the bottom of the slow cooker and season with garlic powder, onion powder, salt, and pepper.
  3. Prepare the Sauce: In a medium bowl, mix together the cream of chicken soup, sour cream, and chicken broth until smooth. Spread the mixture evenly over the chicken.
  4. Add the Stuffing: Sprinkle the dry stuffing mix over the top of the soup mixture. Add frozen vegetables if desired.
  5. Cook: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is cooked through.
  6. Finish and Serve: Fluff the stuffing with a fork before serving. Garnish with chopped fresh parsley if desired.

Notes

  • This recipe works well with chicken thighs as an alternative.
  • For added flavor, substitute cream of mushroom or cream of celery soup for cream of chicken.
  • Leftovers reheat well and make a tasty next-day lunch.
