Instructions
- Prepare the Sausage: If using whole sausages, slice them into 1-inch pieces to allow even cooking and flavor distribution.
- Brown the Sausage: In a skillet over medium heat, cook the sausage pieces until browned, about 5-7 minutes, breaking them up into smaller pieces as they cook. If using pre-cooked sausage, slice and skip this step.
- Transfer to Slow Cooker: Place the browned sausage or uncooked sliced sausage into the slow cooker, setting the base for your casserole.
- Add Vegetables and Seasonings: Add chopped onion, minced garlic, sliced carrots, diced potatoes, the canned diced tomatoes with their juices, chicken broth, dried thyme, dried oregano, paprika, salt, and pepper into the slow cooker over the sausage.
- Cook the Casserole: Stir all ingredients gently to combine. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender and the sausage is thoroughly cooked through.
