Seasoning and Sauce

  • Zest of ½ lemon
  • Juice of ½ lemon

Instructions

  1. Blanch the broccoli: Bring a large pot of salted water to a boil. Add the broccoli florets and blanch for 2–3 minutes until they turn bright green and are slightly tender. Drain well and transfer the florets onto a clean kitchen towel to dry thoroughly.
  2. Prepare for roasting: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easy.
  3. Smash the broccoli: Arrange the blanched broccoli florets evenly on the prepared baking sheet. Using the bottom of a glass or mason jar, gently press down on each floret until it is flattened but still intact, maximizing surface area for roasting.
  4. Make the seasoning mixture: In a small bowl, combine the olive oil, minced garlic, red chili flakes, sea salt, black pepper, and lemon zest. Mix well to infuse the flavors.
  5. Toss and roast: Drizzle the seasoning mixture evenly over the smashed broccoli, ensuring each floret is well coated. Place the baking sheet in the preheated oven and roast for 20–25 minutes until the edges are crispy and golden brown.
