Description

Spicy Mince Quesadillas are a quick and flavorful Mexican-inspired meal featuring seasoned ground beef, sautéed peppers and onions, melted cheese, and crispy flour tortillas. Perfect for a satisfying lunch or dinner, these quesadillas combine robust spices and gooey cheese for a comforting and easy-to-make dish.

  • 500g ground beef or minced meat
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1-2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Assembly

  • 4 large flour tortillas
  • 200g shredded cheese (cheddar or Monterey Jack)

Instructions

  1. Cook mince: In a skillet, heat olive oil over medium heat. Add the chopped onion, minced garlic, and chopped bell pepper. Cook until softened, about 3-5 minutes. Add the minced meat, chili powder, cumin, salt, and pepper. Cook until the meat is browned, breaking it apart with a spatula to ensure even cooking.
  2. Assemble quesadillas: Place one flour tortilla in the skillet. Sprinkle a generous amount of shredded cheese over half of the tortilla. Spoon a portion of the cooked mince mixture on top of the cheese, then sprinkle more cheese over the mince. Fold the tortilla in half to enclose the filling.
  3. Cook quesadillas: Cook the folded quesadilla for 3-4 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese inside has melted completely. Repeat this process with the remaining tortillas and mince filling.
  4. Serve: Remove the cooked quesadillas from the skillet and cut into wedges. Garnish with fresh cilantro if desired, and serve warm with sour cream or salsa on the side.

  • If you prefer a milder flavor, reduce the chili powder to 1 teaspoon or omit it completely.
