Description

Celebrate St. Patrick’s Day with these deliciously festive Frosted Bite Brownies. These bite-sized treats combine rich, fudgy brownies with a creamy, minty green frosting topped with festive sprinkles and decorations. Perfect for parties or a sweet holiday snack, they’re easy to make using either a brownie mix or your favorite homemade brownie recipe.

Ingredients

Scale

Brownie Base

  • 1 box of brownie mix (or homemade brownies if preferred)
  • ½ cup vegetable oil (or as instructed on the brownie mix box)
  • 2 large eggs
  • 2 tbsp water (or as instructed on the brownie mix box)
  • ¼ tsp peppermint extract (optional for a minty twist)

Frosting

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2-3 tbsp heavy cream
  • 1 tsp vanilla extract
  • ½ tsp green food coloring (gel or liquid)
  • A pinch of salt

Decorations

  • Green sprinkles or shamrock decorations
  • White chocolate chips or mini marshmallows (optional)

Instructions

  1. Prepare the Brownies: Preheat your oven according to the brownie mix instructions, typically 350°F (175°C). In a mixing bowl, combine the brownie mix, vegetable oil, eggs, water, and peppermint extract if using. Mix until smooth and well combined.
  2. Bake the Brownies: Pour the batter into a greased or lined 8×8 inch baking pan. Bake for approximately 20-25 minutes, or until a toothpick inserted comes out with moist crumbs. Remove from oven and allow to cool completely in the pan.
  3. Cut into Bites: Once cooled, cut the brownies into small bite-sized squares, about 16 to 20 pieces, depending on the size you prefer.
  4. Make the Frosting: In a large bowl, beat the softened unsalted butter until creamy. Gradually add powdered sugar, mixing well after each addition. Add heavy cream, vanilla extract, green food coloring, and a pinch of salt. Beat the mixture until light and fluffy, adding cream as needed to reach a spreadable consistency.
  5. Frost the Brownie Bites: Using a piping bag or a spatula, spread or pipe the green frosting onto each brownie bite evenly.
  6. Decorate: Sprinkle green sprinkles or shamrock decorations over the frosted bites. Optionally, top with white chocolate chips or mini marshmallows for extra festivity.
  7. Serve and Enjoy: Chill the brownie bites in the refrigerator for about 15 minutes to set the frosting before serving. Enjoy your festive St. Patrick’s Day treat!

Notes

  • You can substitute homemade brownies if you prefer a from-scratch option.
  • The peppermint extract is optional but adds a nice mint flavor that complements the green frosting.
  • Adjust the amount of heavy cream in the frosting to achieve your preferred consistency.
  • Store leftover brownie bites in an airtight container in the refrigerator for up to 4 days.
  • For a gluten-free version, use a gluten-free brownie mix or homemade gluten-free brownies.
