  • 50ml dairy whipping cream
  • 1–2 tbsp condensed milk
  • 3 tbsp strawberry purée


Instructions

  1. Whip the filling: In a chilled bowl, beat the non-dairy and dairy whipping creams together until soft peaks form. Gently fold in the condensed milk and strawberry purée to create a smooth and flavorful strawberry cream. Scoop the mixture into small portions and freeze them until firm for easy filling.
  2. Cook the mochi dough: In a mixing bowl, whisk together the glutinous rice flour, corn starch, sugar, milk, and strawberry food coloring until smooth. Microwave the mixture for 2 minutes, then stir well. Continue microwaving in 1-minute intervals, stirring after each, until the dough thickens into a sticky and translucent consistency. Immediately stir in the butter until the dough becomes smooth and shiny.
  3. Cool and portion: Let the mochi dough cool slightly to handle. Dust a clean surface generously with cornstarch to prevent sticking, then turn out the dough and divide it into small equal portions or balls suitable for wrapping the filling.
  4. Assemble: Flatten each mochi portion into a round disc. Take a frozen cream ball and place it in the center of the mochi round. Carefully pinch the edges of the mochi to fully seal the filling inside, then gently shape it into a smooth ball ensuring the filling is enclosed.
