Quesadilla Ingredients
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup cooked shredded chicken or black beans
- 1 cup sliced bell peppers (mixed colors)
- 1/2 cup sliced red onion
- 1 tsp ground cumin
- 1 tsp chili powder
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Prepare Filling: In a mixing bowl, combine the cooked shredded chicken or black beans with the sliced bell peppers, red onion, ground cumin, and chili powder. Stir well until all ingredients are evenly mixed and well coated with spices.
- Assemble Quesadillas: Lay half of the tortillas flat on the prepared baking sheet. Evenly distribute the filling mixture over each tortilla, then sprinkle shredded cheddar cheese generously on top of the filling.
- Top and Press: Place the remaining tortillas on top of the filled ones. Gently press down to help the layers adhere and ensure even baking.
- Bake: Bake the assembled quesadillas in the preheated oven for 15 to 20 minutes, or until the tortillas turn golden brown and crispy and the cheese inside is melted.
- Serve: Remove from the oven and let the quesadillas cool slightly. Slice into wedges and serve warm with your choice of salsa, guacamole, or other favorite dips.
Notes
- You can substitute the cooked shredded chicken with black beans to make the quesadillas vegetarian.
- For extra crispiness, consider flipping the quesadillas halfway through baking.
- Add jalapeños or hot sauce if you prefer a spicier flavor.
- Use whole wheat tortillas to increase the fiber content for a healthier option.
- Leftovers can be stored in the refrigerator for up to 2 days and reheated in the oven or air fryer for best texture.
