Ingredients
Scale
Puff Pastry
- 1 sheet puff pastry, thawed
Sweet Potato
- 2 medium sweet potatoes, peeled and sliced thin
- 1 tbsp olive oil
- Salt and black pepper, to taste
Caramelized Onions
- 1 large onion, thinly sliced
- 1 tbsp butter
- 1 tsp brown sugar
Toppings and Garnish
- 4 oz feta cheese, crumbled
- 1 tsp fresh thyme leaves
- 1 egg, beaten (for egg wash)
Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Roast Sweet Potatoes: Toss the thinly sliced sweet potatoes with olive oil, salt, and black pepper to ensure even seasoning. Spread them out on the prepared baking sheet and roast in the oven for 20 minutes until tender. Remove and set aside.
- Caramelize Onions: In a skillet over medium heat, melt the butter and add the sliced onions. Cook slowly, stirring occasionally, until the onions become soft. Sprinkle in the brown sugar and continue cooking for about 15 minutes until the onions turn golden and caramelized. Remove from heat and set aside.
- Prepare Puff Pastry Base: On a lightly floured surface, gently roll out the thawed puff pastry slightly to even the thickness. Transfer it onto the lined baking sheet and score a 1-inch border around the edges without cutting all the way through to create a raised crust when baked.
- Assemble Tart: Spread the caramelized onions evenly within the scored border. Arrange the roasted sweet potato slices on top of the onions, then sprinkle the crumbled feta cheese evenly over the tart. Finally, scatter fresh thyme leaves over the top for added aroma and flavor.
- Apply Egg Wash and Bake: Brush the exposed pastry border with the beaten egg to achieve a golden, glossy finish during baking. Place the tart in the oven and bake for 20 to 25 minutes until the pastry is puffed up and beautifully golden brown.
- Cool and Serve: Allow the tart to cool slightly before slicing. Serve warm or at room temperature for the best taste and texture.
Notes
- Ensure sweet potato slices are uniform in thickness for even roasting.
- Caramelizing onions slowly enhances their sweetness and depth of flavor.
- Use fresh thyme for the best aromatic impact; dried thyme can be substituted but in lesser quantities.
- This tart can be served as a main dish or a side, and pairs well with a crisp green salad.
- Leftovers can be refrigerated and gently reheated in the oven to maintain crispness.
