Instructions
- Cook the beef: Heat the olive oil in a skillet over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease, then stir in the taco seasoning and a splash of water. Simmer for 2–3 minutes, then remove from heat.
- Prepare the bread: Butter one side of each bread slice evenly. This buttered side will be placed down on the skillet to achieve a golden, crispy crust.
- Assemble the sandwich: Place two slices of bread, buttered side down, on a skillet or griddle over medium heat. Evenly distribute a mix of shredded cheddar and Monterey Jack cheese atop each slice. Add a layer of the cooked taco meat, followed by chopped tomatoes, green onions, and pickled jalapeños if using. Sprinkle more cheese on top, then cover each sandwich with the remaining bread slices, buttered side up.
- Cook the sandwich: Cook over medium heat until the bread is golden brown and crispy, about 3–4 minutes per side. Flip the sandwiches once carefully to ensure even browning and the cheese is fully melted.
