Description

These Taco Tortilla Roll-Ups are creamy, flavorful, and perfect for parties or easy lunches. Combining a zesty cream cheese and sour cream base with cheddar, bell peppers, olives, and green onions wrapped in soft flour tortillas, they offer a delicious Mexican-American appetizer that’s simple to prepare and great for make-ahead serving.

Ingredients

Scale

Filling

  • 8 ounces cream cheese, softened
  • ½ cup sour cream
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheddar cheese
  • ½ cup finely diced red bell pepper
  • ½ cup finely chopped black olives
  • 2 green onions, thinly sliced

Wrap

  • 4 large flour tortillas (burrito size)

For Serving

  • Salsa or guacamole for dipping

Instructions

  1. Prepare the filling: In a medium bowl, beat together the softened cream cheese, sour cream, and taco seasoning until the mixture is smooth and well combined, ensuring the seasoning is evenly distributed.
  2. Add vegetables and cheese: Stir in the shredded cheddar cheese, diced red bell pepper, chopped black olives, and sliced green onions, folding the ingredients gently until evenly mixed throughout the creamy base.
  3. Spread the mixture on tortillas: Lay out the flour tortillas on a flat surface and spread an even layer of the prepared filling over each tortilla, leaving a ½-inch border around the edges to prevent spillage when rolling.
  4. Roll the tortillas tightly: Carefully roll each tortilla up tightly from one side to the other, creating a compact log of filling and tortilla.
  5. Chill to firm up: Wrap each rolled tortilla individually in plastic wrap and refrigerate for at least 1 hour to allow the filling to set and the rolls to become firm and easier to slice.
  6. Slice and serve: Once chilled, unwrap the rolls and slice each into approximately ¾-inch pieces to create bite-sized roll-ups. Arrange them on a platter and serve with salsa or guacamole on the side for dipping.

Notes

  • Perfect for parties, game days, or easy lunchboxes.
  • Add diced cooked chicken or ground beef to the filling for a heartier snack.
  • Use whole wheat or spinach tortillas for added color, fiber, and nutrition.
