Description

A hearty and comforting Tater Tot Breakfast Casserole combining spicy breakfast sausage, eggs, cheese, and crispy tater tots, perfect for a satisfying morning meal or brunch with family and friends.

Ingredients

Scale

Sausage Mixture

  • 1 pound spicy breakfast sausage (bulk or casings removed)
  • 1 onion (diced)
  • 2 cloves garlic (minced)

Egg Mixture

  • 8 large eggs
  • 1 cup milk
  • ¼ teaspoon kosher salt
  • ½ teaspoon ground black pepper

Other

  • 2 cups freshly shredded cheddar cheese (divided)
  • 16 ounces frozen tater tots (1 bag)
  • Chopped fresh chives (optional, for garnish)

Instructions

  1. Preheat Oven: Preheat the oven to 350°F. Prep a 9×13-inch baking pan with nonstick cooking spray and set aside to ensure the casserole doesn’t stick.
  2. Cook Sausage Mixture: Heat a large skillet over medium heat. Add the sausage and diced onion, cooking while breaking up the sausage with a spoon until fully cooked through and the onion becomes translucent. Stir in minced garlic and cook for an additional minute until fragrant. Drain excess grease and transfer the mixture evenly into the prepared baking dish.
  3. Prepare Egg Mixture: In a medium bowl, whisk together the eggs, milk, kosher salt, and ground black pepper until well combined and smooth.
  4. Add Cheese Over Sausage: Sprinkle 1 cup of shredded cheddar cheese evenly over the cooked sausage and onion mixture in the baking dish.
  5. Pour Egg Mixture: Pour the whisked egg mixture evenly over the layered sausage and cheese in the dish, ensuring it is well distributed.
  6. Top with Tater Tots and Cheese: Arrange the frozen tater tots on top of the egg mixture in a single layer, then sprinkle the remaining 1 cup of cheddar cheese evenly over the tater tots. At this stage, the casserole can be wrapped and refrigerated for up to 12 hours or baked immediately.
  7. Bake: Bake uncovered in the preheated oven for 50-60 minutes, or until the egg mixture is fully set in the center and the tater tots are golden and crispy on top.
  8. Garnish and Serve: Remove from the oven, optionally garnish with chopped fresh chives, then serve warm and enjoy your delicious breakfast casserole.

Notes

  • You can prepare this casserole the night before by assembling and refrigerating it, then baking it fresh in the morning.
  • For a milder flavor, substitute spicy sausage with mild breakfast sausage or turkey sausage.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Chives add a fresh, mild onion flavor as garnish but can be omitted if preferred.
  • If you prefer extra crispy tater tots, bake an additional 5-10 minutes after the casserole is set.
