Served in refreshing butter lettuce leaves and garnished with chopped peanuts and lime, this gluten-free dish is perfect for a healthy and easy Asian-inspired meal.

Ingredients

Scale

Protein and Vegetables

  • 1 pound ground chicken
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 small red onion, finely diced
  • 1 red bell pepper, finely diced
  • ¼ cup shredded carrots
  • ¼ cup chopped cilantro
  • ¼ cup chopped green onions
  • Butter lettuce leaves, for serving

Sauces and Seasonings

  • 1 tablespoon sesame oil
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar or honey
  • 1 teaspoon sriracha (optional)
  • Chopped peanuts, for garnish
  • Lime wedges, for garnish

Instructions

  1. Prepare the skillet: Heat 1 tablespoon of sesame oil in a large skillet over medium heat to create a hot cooking surface for the chicken.
  2. Cook the ground chicken: Add the 1 pound of ground chicken to the skillet and cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes.
  3. Sauté aromatics: Add the minced garlic, grated ginger, and finely diced red onion to the skillet and sauté for 2-3 minutes until fragrant and softened.
  4. Add vegetables: Stir in the finely diced red bell pepper and shredded carrots; cook for an additional 2 minutes to slightly soften the vegetables.
  5. Make the sauce: In a small bowl, whisk together 3 tablespoons soy sauce, 1 tablespoon fish sauce, 1 tablespoon lime juice, 1 tablespoon brown sugar or honey, and 1 teaspoon sriracha (if using).
  6. Combine sauce and chicken mixture: Pour the sauce into the skillet over the chicken and vegetables and stir well to coat everything evenly. Cook for 1-2 more minutes to meld flavors.
  7. Finish with herbs: Remove the skillet from heat and stir in ¼ cup chopped cilantro and ¼ cup chopped green onions for fresh flavor.
  8. Assemble the wraps: Spoon the chicken mixture into butter lettuce leaves and garnish with chopped peanuts and a squeeze of fresh lime juice.
  9. Serve immediately: Enjoy these wraps fresh for the best texture and flavor.

Notes

  • For a vegetarian version, replace ground chicken with crumbled tofu or tempeh.
  • Add extra sriracha if you like more heat or serve it alongside the wraps.
  • Use butter lettuce for the best wrap texture and flavor.
  • Serve immediately to maintain fresh crispness of the lettuce.
