Beef Patties
- 2 pounds ground beef (80% lean)
- Salt and pepper to taste
- 1/2 cup salted butter (softened, divided)
- 8 slices American cheese

Instructions
- Season and shape patties: Sprinkle salt and pepper over the ground beef. Divide into eight equal 1/4-pound portions. Form each into a patty slightly larger than your buns, as they will shrink during cooking.
- Chill the patties: Cover the patties with plastic wrap and refrigerate to help them hold their shape and enhance flavor.
- Butter the buns: Spread softened butter liberally on the inside surfaces of each brioche bun to prepare for toasting.
- Toast the buns: Heat a skillet or griddle over medium-high heat. Place the buns butter-side down and toast until lightly browned. Remove and optionally brush the top of each bun with some of the remaining butter from the skillet.
- Cook the patties: Add additional pats of butter to the hot skillet. Place the beef patties onto the skillet, pressing gently with a spatula. Cook about 2 minutes on one side until nicely browned.
- Flip and add cheese: Flip each patty over, cover each with a slice of American cheese so it can melt while the second side cooks, about 2 more minutes.
- Prepare buns with toppings: On each toasted bun bottom, layer your choice of condiments, tomato slices, onion slices, pickles, and lettuce as desired.
- Assemble burgers: Stack two cooked cheese-topped patties per bun bottom. Place the bun top on the patties to complete the burger.
