Delicious and nutritious Tofu and Vegetable Patties made with crumbled firm tofu, fresh vegetables, and flavorful spices. These vegan patties are perfect as a main course, served warm with your favorite sauce or in a sandwich. - 1 (14-ounce) block firm tofu, pressed and crumbled
- 1 cup grated carrot
- 1/2 cup finely chopped bell pepper
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
Seasonings & Binders
- 2 tablespoons soy sauce
- 1 tablespoon nutritional yeast (optional)
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/4 cup chopped fresh parsley or cilantro
- 1/2 cup breadcrumbs, plus more as needed
- Salt and black pepper to taste

- 2 tablespoons olive oil
Instructions
- Prepare the tofu and vegetables: In a large bowl, mix the crumbled tofu, grated carrot, chopped bell pepper, onion, and minced garlic to combine all the fresh ingredients evenly.
- Season and bind the mixture: Add the soy sauce, nutritional yeast if using, smoked paprika, ground cumin, chopped parsley or cilantro, breadcrumbs, salt, and black pepper. Mix well until the ingredients are fully incorporated. If the mixture is too wet to hold its shape, gradually add more breadcrumbs, one tablespoon at a time, until it becomes firm enough to form patties.
- Form the patties: Shape the mixture into 6 to 8 evenly sized patties, making sure they hold together well for cooking.
- Cook the patties: Heat 2 tablespoons of olive oil in a skillet over medium heat. Once hot, add the patties and cook for 4 to 5 minutes on each side, flipping carefully, until they are golden brown and cooked through with a firm texture.
- Serve: Remove from the skillet and serve warm with your favorite sauce, yogurt dip, tahini, or inside burger buns for a hearty meal.

- These patties freeze well, both uncooked and cooked, for later enjoyment.
