Bread and Toasting

  • 1 French baguette (sliced into ½-inch thick pieces)
  • 2 tablespoons olive oil (plus more for drizzling)
  • 1 garlic clove (peeled, for rubbing on toast)

Bruschetta Topping

  • 2 cups cherry tomatoes (halved or diced)
  • 1 red bell pepper (finely diced)
  • 1 yellow bell pepper (finely diced)
  • 2 cloves garlic (minced)
  • 2 tablespoons fresh basil (chopped)
  • 1 tablespoon balsamic vinegar
  • Salt and black pepper to taste


Instructions

  1. Preheat and Toast Bread. Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and brush them lightly with olive oil. Toast in the oven for 8–10 minutes, or until the bread is golden brown and crisp.
  2. Garlic Rub. While the bread is still warm, gently rub each toasted slice with the peeled garlic clove. This imparts a subtle garlic aroma and flavor to the toast which complements the topping perfectly.
  3. Prepare the Tomato and Pepper Mixture. In a medium bowl, combine the halved or diced cherry tomatoes, finely diced red and yellow bell peppers, minced garlic, chopped fresh basil, balsamic vinegar, and 2 tablespoons of olive oil. Season with salt and black pepper to taste. Mix everything well and allow the mixture to sit for 10–15 minutes to blend the flavors.
  4. Assemble the Bruschetta. Just before serving, spoon the tomato and pepper mixture generously onto each toasted baguette slice. Drizzle with a little extra olive oil if desired and garnish with additional fresh basil for an elegant touch.
