- 2 cups cherry tomatoes (halved or diced)
- 1 red bell pepper (finely diced)
- 1 yellow bell pepper (finely diced)
- 2 cloves garlic (minced)
- 2 tablespoons fresh basil (chopped)
- 1 tablespoon balsamic vinegar
- Salt and black pepper to taste
Instructions
- Preheat and Toast Bread. Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and brush them lightly with olive oil. Toast in the oven for 8–10 minutes, or until the bread is golden brown and crisp.
- Garlic Rub. While the bread is still warm, gently rub each toasted slice with the peeled garlic clove. This imparts a subtle garlic aroma and flavor to the toast which complements the topping perfectly.
- Prepare the Tomato and Pepper Mixture. In a medium bowl, combine the halved or diced cherry tomatoes, finely diced red and yellow bell peppers, minced garlic, chopped fresh basil, balsamic vinegar, and 2 tablespoons of olive oil. Season with salt and black pepper to taste. Mix everything well and allow the mixture to sit for 10–15 minutes to blend the flavors.
- Assemble the Bruschetta. Just before serving, spoon the tomato and pepper mixture generously onto each toasted baguette slice. Drizzle with a little extra olive oil if desired and garnish with additional fresh basil for an elegant touch.
