Description

Rice and Broth

  • 2 cups long grain rice
  • 2 1/2 cups chicken broth

Meat and Vegetables

  • 1 pound ground turkey
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup mixed vegetables (carrots and peas)
  • 1 cup diced tomatoes
  • 1/4 cup chopped fresh parsley

Seasonings and Oils

  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 tablespoon tomato paste


Instructions

  1. Rinse Rice: Rinse the rice under cold water until the water runs clear, then drain well and set aside.
  2. Sauté Onion: Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until soft and translucent.
  3. Add Garlic: Stir in the minced garlic and cook for about 30 seconds until fragrant.
  4. Cook Turkey: Add the ground turkey and cook while breaking it apart with a spoon until browned and fully cooked.
  5. Season Turkey: Season the turkey mixture with salt, black pepper, paprika, dried thyme, and oregano. Stir well to coat the meat evenly with the spices.
  6. Add Tomato Paste and Tomatoes: Mix in the tomato paste and diced tomatoes and cook for 2 to 3 minutes to deepen the flavor.
  7. Add Rice: Add the rinsed rice to the pot and stir to coat the grains with the turkey mixture.
  8. Add Broth and Boil: Pour in the chicken broth and bring the mixture to a gentle boil.
  9. Simmer: Reduce the heat to low, cover the pot, and simmer for 15 to 18 minutes until the rice is tender and the liquid is absorbed.
  10. Add Vegetables: During the last 5 minutes of cooking, stir in the mixed vegetables.
  11. Rest: Remove from heat and let the rice rest, covered, for 5 minutes.
  12. Fluff and Serve: Fluff the rice with a fork, sprinkle chopped parsley on top, and serve warm.
