  • 1 green bell pepper, chopped

Beans and Vegetables:

  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn, drained

Tomato Base and Seasonings:

  • 1 (28-ounce) can crushed tomatoes
  • 1 (6-ounce) can tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper, to taste

Liquid:

  • 1 cup low-sodium chicken broth or water

Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot. Sauté onion until softened, then add garlic.
  2. Cook Turkey: Add ground turkey, cook until browned.
  3. Add Peppers: Stir in red and green bell peppers, cook.
  4. Season: Add chili powder, cumin, smoked paprika, oregano, cayenne, salt, and pepper.
  5. Tomato Base: Mix in tomato paste, then add crushed tomatoes.
  6. Combine Ingredients: Add kidney beans, black beans, corn, and broth. Simmer.
  7. Finish: Adjust seasoning, simmer for 25-30 minutes. Serve hot.

Notes

  • For extra heat, add more cayenne or a jalapeño.
  • Substitute turkey with chicken or lean beef.
