Beans and Vegetables:
- 1 (15-ounce) can kidney beans, drained and rinsed
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can corn, drained
Tomato Base and Seasonings:
- 1 (28-ounce) can crushed tomatoes
- 1 (6-ounce) can tomato paste
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper, to taste
Liquid:
- 1 cup low-sodium chicken broth or water
Instructions
- Sauté Aromatics: Heat olive oil in a large pot. Sauté onion until softened, then add garlic.
- Cook Turkey: Add ground turkey, cook until browned.
- Add Peppers: Stir in red and green bell peppers, cook.
- Season: Add chili powder, cumin, smoked paprika, oregano, cayenne, salt, and pepper.
- Tomato Base: Mix in tomato paste, then add crushed tomatoes.
- Combine Ingredients: Add kidney beans, black beans, corn, and broth. Simmer.
- Finish: Adjust seasoning, simmer for 25-30 minutes. Serve hot.
