  • 1/3 cup unsalted butter, melted

  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 cup semisweet chocolate chips, melted and slightly cooled
  • 1/2 cup caramel sauce, plus more for drizzling
  • 1 cup chopped pecans, divided

For Garnish:

  • Whipped cream (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 325°F and lightly grease a 9-inch springform pan.
  2. Prepare the Crust: Combine chocolate cookie crumbs, sugar, and melted butter. Press into the bottom of the pan and bake for 10 minutes. Let cool.
  3. Make the Filling: Beat cream cheese until smooth. Add sugar, eggs, vanilla, and sour cream. Divide the batter, mix in melted chocolate to one half, and layer over crust.
  4. Bake: Bake for 50–60 minutes until set. Cool, then refrigerate for at least 4 hours.
  5. Serve: Drizzle with caramel sauce, sprinkle with pecans, and garnish with whipped cream.

  • To prevent cracking, bake the cheesecake in a water bath or place a pan of hot water on the rack below.
