Description

This Walking Taco Casserole is a fun and flavorful twist on traditional tacos, combining seasoned ground beef, corn, black beans, and melted cheese layered over crispy corn chips, then baked to perfection.   • 1 small onion, diced
  • 1 packet taco seasoning
  • ¾ cup water
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1½ cups shredded cheddar or Mexican blend cheese
  • 2–3 cups corn chips (Fritos or Doritos), slightly crushed

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Cook the Beef: In a skillet over medium heat, brown the ground beef together with the diced onion until fully cooked and the onion softens. Drain off any excess grease to keep the dish from becoming too oily.
  3. Add Seasoning & Veggies: Stir in the taco seasoning and water, letting the mixture simmer for 2 to 3 minutes until thickened. Then, add the drained corn and black beans, mixing everything thoroughly.
  4. Assemble the Casserole: Spread the slightly crushed corn chips evenly on the bottom of the prepared baking dish. Pour the seasoned beef mixture over the chips and spread it out. Then, sprinkle the shredded cheese evenly on top.
  5. Bake: Place the casserole uncovered in the oven and bake for 10 to 15 minutes, or until the cheese is melted, bubbly, and slightly golden.
  6. Top and Serve: Remove from oven and garnish with your favorite taco toppings such as shredded lettuce, diced tomatoes, sour cream, sliced olives, jalapeños, salsa, or avocado. Serve hot and enjoy!
