Ingredients

Scale

For the Watermelon Juice:

  • 2 cups fresh watermelon (cubed)
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 2 tablespoons sugar (optional, adjust to taste)

For the Sodium Alginate Mixture:

  • 1/2 teaspoon sodium alginate
  • 1 cup water

For the Calcium Bath:

  • 1/2 teaspoon calcium lactate
  • 2 cups water
  • Additional cold water (for rinsing)

Instructions

  1. Prepare the Watermelon Juice: In a blender, puree the watermelon, water, lemon juice, and sugar until smooth. Strain through a fine mesh sieve.
  2. Mix the Sodium Alginate: In a clean blender, mix 1 cup of the strained watermelon juice with sodium alginate until fully dissolved. Let it rest for 15–20 minutes.
  3. Prepare the Calcium Bath: Dissolve calcium lactate in 2 cups of water in a wide bowl.
  4. Create Popping Boba: Using a dropper, drop the watermelon-alginate mixture into the calcium bath. Let sit for 1–2 minutes until it forms a gel-like skin. Rinse in cold water.
  5. Store and Serve: Store the popping boba in watermelon juice until ready to use.

Notes

  • For best texture, serve popping boba fresh and avoid refrigerating for long periods.
  • Perfect for teas, lemonades, or desserts.
  • Use food-grade sodium alginate and calcium lactate.
