Zucchini Parmesan Crisps:
- 2 medium zucchinis (thinly sliced into 1/4-inch rounds)
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup panko breadcrumbs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg (beaten)

Instructions
- Preheat the oven: Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Prepare the zucchini: Pat dry the zucchini slices to remove excess moisture.
- Prepare the coating: Mix Parmesan, panko breadcrumbs, garlic powder, oregano, salt, and pepper in a shallow bowl.
- Coat the zucchini: Dip each zucchini slice in beaten egg, then press into the breadcrumb mixture.
- Bake: Arrange coated slices on the baking sheet, spray with olive oil, and bake for 20–25 minutes, flipping halfway through.
- Serve: Serve the crisps immediately, optionally with marinara sauce for dipping.
Notes
- For extra crispiness, broil the zucchini crisps for the last 2–3 minutes of baking.
- You can also air fry them at 400°F for 10–12 minutes, flipping halfway.
